Macaroni & Chicken Casserole

-One of my favorite childhood meals my mother used to cook and fortunately was easy enough for me to make when I went off to college! 

2 cups macaroni
3-4 cups cooked cut up chicken
1 cup shredded cheddar cheese
1 ½ cups milk
1 cup water
2 cans cream of chicken soup
2 hard-boiled eggs (cut up)
Light salt / pepper

In sauce pan, cook macaroni according to package directions. Drain macaroni and add remaining ingredients. Mix well and cook on low until heated through.  Enjoy!

Loaded Guacamole

4 avocados
2 cloves garlic
1 teaspoon salt
1 tomato, seeded and finely diced
¼ red onion, finely diced
¼ cup chopped cilantro
1 lime

(optional - hot sauce)

Preparation:
Remove outer layer of avocado and pits; roughly dice avocado and place in mixing bowl. On a cutting board, combine salt and garlic – use the side of a chef’s knife to smash the garlic into a paste, using the salt as an abrasive; add to mixing bowl. Combine remaining ingredients and mash with a fork to combine; do not overly mash, as you want the texture to remain chunky. I have also added in various hot sauces to spice things up a bit. Enjoy!
