Honey Mango Chicken

The sauce recipe is Sandra Lee. She cooks it with a rotisserie chicken. I do it differently.

Ingredients:
2 cups honey
1 cup mango juice
1/2 cup light brown sugar
1/2 lemon, juiced
4-6 Chicken Breasts
2-3 mangos, peeled and sliced 1-inch thick

For the glaze: In a saucepan over medium-high heat, combine the honey, mango juice, brown sugar and lemon juice. Bring to a boil and cook until the sauce coats the back of a spoon, about 5 minutes.

Place chicken on grill. Using a pastry brush, coat chicken with a generous amount of glaze, add more as needed. Grill chicken until cooked through. About 2 minutes before removing the chicken, place the slices of mango on the grill.

I like to grill the mango pieces and then chop them up and place them over the chicken before eating, as well as pour a little more glaze over the chicken.

Refrigerate remaining sauce for leftovers!

 

 

 

Brown Sugar Baked Peaches

Ingredients:
1 fresh peach
1 tsp. unsalted butter, divided
2 to 4 tsp. brown sugar, divided
Sprinkling of ground cinnamon, to taste

Directions:
Halve peaches and remove pit. Place in baking dish, skin side down.
Place 1/2 teaspoon butter in the hollow of each peach, top each peach half with 1 or 2 teaspoons brown sugar, and sprinkle with cinnamon.
Bake at 375 degrees until peaches are tender, about 30 minutes. Serve warm.

If you’re feeling like a rebel, add a scoop of vanilla bean ice cream to the top.
